Spicy Beef Salad

Summer days.
Easy cooking. Different.
This is a meal that I like and often have when I am in Korea (one of the few). You can prepare the meat mixture in advance.

To eat, scoop some meat on butter (Boston) lettuce and fold in four or roll like a spring roll. Nice and tasty.


Spicy Beef Salad
Prep: 20 min. + 3 hrs marinating     Cooking time: 15 min     Serves: 6 as a starter


Ingredients:
  • 15 ml oil
  • 500g beef mince
  • 30 ml fish sauce
  • 15 ml soy sauce
  • 50 ml freshly squeezed lime juice
  • 15 ml soft brown sugar
  • 10 spring onions, finely chopped
  • 10 ml lemon grass (tube)
  • 5 ml chili pepper, flakes
  • 30 ml each of chopped fresh coriander, mint and parsley
  • 1/3 red bell pepper, sliced
  • 6-10 lettuce leaves

Preparation:
Heat the oil in a frying pan. Add the mince and cook over medium heat until browned, breaking up any lumps with a fork as it cooks. Remove from the pan and set aside.

Combine the fish sauce, soy sauce, lime juice and brown sugar in a bowl. Add the beef and the red bell pepper. Mix in the spring onion, lemon grass, chili pepper and herbs.

Cover and refrigerate for at least 3 hours, stirring occasionally, or overnight. To serve, lay a lettuce leaf on each plate and spoon in some of the beef mixture.

Note: you can use pork, chicken, turkey, or veal as well.
